Look good -- had to stop by today heroes in the newsroom here at thirteen thirty every Saturday between new month. The -- -- with good luck guys and you know. I have such great sponsors and for the next three or four shows you're gonna hear all about some of them and the reason I have great sponsors it's you know the -- called the good life. And they all do good like stuff. We're sitting in the Scotch and sirloin and talk about my keys a government good friend -- Bennett here from glaciers Mike welcome to the program thank you so much thank you put -- to me. You know when. Paula talk glibly about. And industry. And you and you were friendly because there's. The great Lebanese present some -- there has been for years and years. You guys are under the radar and you've probably taken over the position as the greatest. Lebanese restaurant president presence and more importantly. -- some of the finest dining in all of the midwest. Let's talk about the friendly talk about the beginning when you tie -- early and your family moved toe which got its Lehman Brothers who came. -- before me. And this -- today -- -- for years and you know we and and that's for almost like twenty years. We had that almost three locations. And you know years after we you know mailed by the time he went to university Rudy them Oxford. Have my passion was or was until like. Penn state house. So we got hooked up with the -- house and then now we'll sort of the Scott. And you know home idea brother though he also. -- love without corporate. Pooled and ease into -- I have. Business as well. You know what I have such fond memories I got here in 1990. And I told you for the first pressure on them I've visited him. Was out east on Kellogg's just before the interest of the turnpike hidden back off the road in a very romantic kind of environment. And that was a -- garden east. Walked in set the bar had a couple Beers we met my met your brother met. And Beth and I had a dinner there and I've planned several events there and I was always so gracious to help us. Particular events -- -- -- guard in the military and we have not only great proved a great service immigrant environment. That that is sorely missed. But then when you look at what you guys have been doing in the last six months the last two years the last ten years. Starting with large were. It's just continues to grow is their food did. Restaurant business in your blood from back eleven what what may duke has been involved in the restaurant business. You know we deal of the hospitality services you know. And let's -- it between my mom. It's passionate about food we grew up in that environment. As -- as the entity when I'm gonna eat for lunch I have to said demand for her if a single day. This is how or passion myself to -- And then you know I've been lucky enough for us to be in this city and did really appreciate everything we do the support this huge. It has to be so. What nostalgic those -- have a -- and gardening off the picture you know with. The west side location was doing grade didn't -- and to deal these site gets the plan gets purchased them whatever happened but. That was so I think Britain certainly for tie that was the beginning and end it in such a great establishment. He had actually put all of us it was a great stoked. And you know in the community and the like the support was huge and then and in this. And this thought that. We never felt you know we can grow more with -- having -- and that's why. We felt we need to do even better and we don't -- went through that you know electrical box for EI ESP source and I've always had passion for that statehouses. For the nastiness and any tears. And men and that's why I feel that fulfill my passion I can deliver my -- best and that of course you know with the wind serving -- well. It is part of my life and patience really change or experience it in the simple they. And I was able to deliberate to a lot of friends and clients at my restaurants associated with -- -- it gives me a lot of glory. Well and I think if I was periods -- the same thing Ali probably just as well. Marks per one of the best things that are happened when you think of the beginning win win marks her first opened the next heroes the anchor of old town. It was always a good restaurant even know with the changes of ownership and menu changes and things. But when when you guys took over when -- took over. It truly became the anchor a whole town not only for quality service on a regular basis but certainly one of the the best and most often used venues for private parties which all of your locations are notorious for but certainly large bird did that. Ya -- when they first open I thought well whatever restaurant. PB and and ended -- now I go there and it's just so much better. When we get some finger from the use of their way into the books and include the restaurant on the menu and in the food service and the warrants or arrest. Really cool and then. We have to talk about the corporate out. I've I've loved Teradyne country club ever since I've been here and I've had a lot of events that are not only when it was the Teradyne country club restaurant. But then the other iterations of the restaurants serve the party you guys putting her upper house there. What you did interpreter also now is something that you've received national honor for. Certainly we're talking about -- service we got a great venue we got a beautiful view we got a good to high quality food and great food and restaurant service. But what you did for wind service. -- -- -- for the house and now at all the locations. Does magic city and for that but I am I'm blowing smoke here but you know what I'm saying you did a great job and thank you for doing met them. Tell us whom to what -- what motivated you to do that. The -- house has great food and you could have got by with cheaper somewhere and you don't need music -- what motivated you to take -- up to that level. You know I've always -- between the difference between ordinary and extraordinary is that tiny extra. And an ever thought you know which just wanna settle some ordinary. I never thought I can settle myself with it. And being in a partner with an illegal and he's a bestseller. And ED three to focus that did he change for Haiti to help that's -- did that tweak the wine industry. And I thought they would be no other reason for me -- to news. They can help my industry as well. And by working with the -- and media felt a huge difference. And to really put my Christians. In a different spot. He always walk -- and have a great steak and I'm sure a lot of my other other restaurants that we should they do sort of sticks and the states as well. Bet you walk and we believe and the fine dining we believe and I like the dining experience he. 1520 minutes. That you know you keep that capacity for the rest of the night. And we believe in delivering that. Wind in the -- appropriately between. You know that the temperature and that he came in the wind and it doesn't matter what. What kind of wind or even white one lead to a BD candy you know because we believe it makes a difference. And we start to go through and educate the clients about it and that's what we felt it makes a huge difference and win that's why we introduce that that the -- Islam and. What restaurants between blocks from the -- is wrong. I I just. I think it was so cool it George Ringo came to Wichita. And did us so more you're tasting at -- upper house and in the course to agreed and -- and and folks from -- have. Enjoyed great events they're because. The -- mean it's just. Nobody else does that and I think that's a distinction that. Who is really cool rob. Let's bring you into this. As they did the head of glaciers fine wine and and doing what you do in serving restaurants I know you're pretty partial to -- put on the spot here Britain. To all the properties of these are Brothers have figures in because they do good while insurance it's a complementary thing for your business. It did very it is very much so and I've met these guys probably. 1516. Years ago -- actually lived right down the street from me. Also. Really -- the three of them there almost like Brothers to me and when. When they came to me and said that we wanted to do. This thing. And we. Go right in with both feet. And it's. It's just been awesome it's been great and this thing means. The upper house had no room talk about that -- I wanna who let's talk about some -- -- -- you guys have done in the past them what. What other events and things that folks could look forward to that all the locations I mentioned the marks were and private dining it is one of my favorite venues. Always the food is spectacular this service is great but pretty much know all of the wait staff that has been there for so long. Interpret -- same thing we've done some magnificent events downstairs. Upstairs in the dining room it's just a great environment to do that kind of thing him. What are some of the things that those locations -- through folks might be looking forward to do in the future. You know and me and even Italians -- actually you know ties and -- a lot of beer tasting. We -- and -- actually and discussed were -- morning offense as a threat not just to establish a mule. Kind of look you know like the Scotch is you know I have been also like. Then new trend we have -- new. Look about why is sort of think about some kind of education about -- put a wind. Or any other -- -- activity we gonna keep like keep bringing those activities. To keep some energy going to keep some education go into their client as much -- enjoyment we will left should've told clients as well. More activities -- in -- we can have more to the scouts. We can have another Simonyi tasting if he it would do with none of them but before Thanksgiving that's a huge hit. And probably couple more activities and the scouts and I'm sure tiger will do something else folks have any ideas about. Some of the best places for a dining of course and some of the best person for private parties and if you want great warrants terrorist. There's no better restaurants in town -- got embarrassed the good life for coming to you today from the -- -- Sherlund we're just had a spectacular. It's. And we'll take a break we come back we're gonna talk about the -- because it is part of which taught history since 1969. And so many people have been touched by and spent time. And discuss internal. And now with some of the things you're doing and I just think that you -- that the so many more people -- him. The system gets more rave reviews is really -- to do with the -- and shoreline with -- -- -- my good friend -- Bennett from -- Or break and we'll be back but more through one and fun for your here so clueless. -- -- -- Upper house is future home of the best people in town. Welcome back it's -- good little good to stay with us every Saturday here it's all about -- one of frontiers and MM one of the best places in town to do that Scotch and sirloin. Think issue hadn't noticed the Scotch and sir loin is. Being refreshed. Thank you to the -- Brothers. But has such great history I mentioned 1969 -- when it became which -- favorite steak house there's been all kinds of dignitaries and beat me here -- imagine anybody in the aviation business. Has had a lunch or dinner here with clients -- just seemed like what are rated as. I know what we have had some great aunt Debbie -- events here at the Scotch. Rob you've been a part of many of those you've watched the changes that have occurred now that these are Brothers involved. What's a Scott to throw -- in view rather than plates that you we got a lot. Well it's. As we've we discussed earlier. He's -- I've moved to Wichita and in 1993. And when I was working for house swan and it was the place to go and you know. For lunch. For broke a great steak. It's it's an institution in Wichita. And there have been. So many restaurants open you know -- from then until now. And that it. People just keep coming back here and that's the amazing things and the things of that is that Mike has done. Since he took over in January it's he's just adding to the experience. But you know I think who I know one time we did an anniversary here was she. 34 years ago was our thirtieth. But but it was two years ago is our thirtieth and I brought it to great Magnum the red one. This through before you guys took over. And we had -- is one glasses that I asked of the head of the cantor. And the guy looked to me like a pig in a wristwatch. And she -- got a plastic water jug water pitcher and that's what we used -- -- for 300 dollar bought bottle over a broad. It was a good DM -- okay. Would it be better today. My guy he gets it would come. Again we're here at my -- -- words -- and sir -- and if you haven't been you know let me tell you that the lunch hours are eleven to three Sunday through Friday. Dinner hour short of 4 o'clock every day day and attend on Monday through Thursday eleven on Friday and Saturday and nine on Sunday. And Mike you do have -- four to six you're doing Sunday brunch which is some new relatively new they started I think about the time you guys were move and then but. Let's talk about the refreshing. You know I read a comment about. Oh win would Denise is new and do these mills article came out there on Kansas dot com about. You -- taken over and one of the comments was they just need to clean the carpet to do little better and that India. You know who -- the Scotch and we we all know about the legacy of the skunks. They have so much loyalty from this business clients so loyal to this business the 81 seat to be obedient. You when his seat to be under a second level. And man you know with -- -- -- passion and our experience before from other venues and other restaurants. That hole we I felt this place -- really -- is no other difference between. Discussions are on or any other state house in the nation kept that Google was statehouses. We should be as good -- combat. And what we've done to it is some really -- it. Bring can continue to look into it. Keep that that old look of this -- an interview is -- new trend to it between we have an executive Shan if between -- you know it just tweak the main use their -- could add more. Items or more meals and appetizers that. Can't really. Feel like an attractive tool. You know we mostly women and new couple. We had -- of course the one huge. So let's talk about wind comes as a certified one -- one of the things you did first of first construction thing you did well of course we're going and was the side where you're gonna put. The wine cellar and oh by the way it's right on the front door where you can't miss it. And it's gorgeous tells the world about your idea with the wine -- where you duplicate folks -- expect him to walk in the door. The minute you walk and you see it kind of out of bottles of wine. Surrounded by debris -- glass which is always supposed to be for the structure. This is the attraction this is the entrance of the Scotch this is what they present the -- and -- in steak house. And you know and that the first day I walked in here and remember in June and January the sixteenth at the moment general manager. I said you know Chris think in the evening I want you to -- all the glasses we start voting day with a regular restaurant. And this is a bit with it is no way we can start to -- them and you can't was -- -- By putting it and right to Deke in the -- is -- -- glass for all the battles for the most part -- even the urban. Game getting the wine -- just opened the door really that we felt the place is just like really open. It's like taking -- big briefed you know and drank on the entrance and we have so much compliment. A lot of clients and so many loyal clients did did anyone see dead Scotch to succeed and to -- -- on the forty years. You can't. You can't do good one service without spending a tremendous amount of time with the way staff. The wait staff has always been historically a great part of of what Scotch and sirloin is all about. Many of those same familiar faces are still here but they've undergone a transformation. -- -- the mosque in northern the little cocoon has turned in the butterflies as they go around serving people want with great wine glasses and -- Kantor's. It really is about training I've had the pleasure of helping a little bit in -- house. I look forward to doing some help here but you've done so much work in this have you you do dad I'm pretty sure you and well probably and she was here for some of that but you must've been an inordinate amount of time with the -- staff. Talking about -- in and preparing them for equality one service -- For the staff. Of this cuts really I can tell you did the best you can get. The only thing I found -- they were really missing before tools demolish. And I thought my job is to bring them the best tools in the world and had to tell them that from day one. You -- to a life more fun more exciting. And means -- more money. And what I did. We've been the -- before market had almost seven seminars for them between regional. Between. With the help of plagiarism brought us a couple wine experts talk about why he. We've got some it caught again -- that help us to feature about the beef and stomachs of her because this is what we feature. A high premium quality of beef which is supposed front got a -- locally in which style and today and in addition to that hopefully will you help you gonna give us another seminar probably absolutely it. And so the stand feud between the tools. That knowledge and dedication and the support. That you provide between mine managers and myself. Day to -- with them. We have not lost it's even when employees and we it's a great great as of the sculpture and like you say you walk and you see this seemed staff. And like before and smiling and more energetic and they feel JD. Excited that one Goran and he -- remembered what she told me she said you know I've been here ten years. You know I just wanna tell you -- -- -- with you and three month more than last ten years I'm so proud working for you up -- really was able to -- my heart -- -- -- Well in the best bargains from rob Bennett and guy -- perspective. There's room we come here we get the benefit of your labor and their enthusiasm and it shows that it is it truly -- a great thing. Let's talk about the many. You know discussed has always had great people that they've. I think it's as good or better now than it's ever been and you've done some things you know used to be the appetizer list was primarily fraud that's gonna changed. Tell us about the things that you kept in some of the things that you added to freshen up the menu. You know with my you know -- is it successful mindset we immediately searched. A lot of manual is and that you know a -- when it heaved a legacy of discussion we kept all the traditional items of the Scotch. And we added more. Nice appetizers. Like it feels repeating it to. Basically achieved younger generation. And today travelers to DC in big cities. And we introduce. Of course a lot of seafood which is fresh beady -- you know if the other they've probably. We do that and a discussion of other restaurants as well. And we maintain that beef. In a way like any other high and the wrists -- so we -- -- -- of widows. We maintained -- and so the premium beef and we -- several cuts to appeal woman as well. And that's only the huge cut but this a look at. Old traditional just -- -- What was of my wife asked a few -- fried lobster. We did accent SEC as -- that -- its -- only after she delivered as well didn't realize you have to do it I think demand musically he's blt. Absolutely it is a new item on the manually India has a way of saying nobody does -- great -- you get that you few pieces of bacon and equality BOT. The FTC beat the mount numerous amount of -- -- -- so I told the kitchen these. This and I Tim doesn't look we gonna make a lot of money out of don't want to double the quantity. Put the same prize winning to have been blt and fortunately you know for my bad luck this been over the whole lot after that I and I. -- Well I don't have you know what in my favorite lunch items is this beautiful hamburger that comes on the pretzel bond. And it's got to it's got to be half pound of beef to start with limits its massive and it's freshly ground and it's just. Well as tremendous a great stuff. So. The the menu is refresh to the wind service is great. I know one of the things that again who -- Arpaio a little bit and before we talk about. The wine list is. Member rob we did the tasting here would have had who would what was are like eight or ten months through reporter from varieties. And it week we were forced I love the word forced to take different glasses. With each of the differ brothels of wine and them what you just head. This big dinner here with a fully estates one dinner. And I can tell you of all the wine dinners have been too it's great when you get. Regal basic glassware but. -- real restaurant the you know a generic glass. That's great. But what you do with high quality real -- where rightfully correct for each one -- that I. Nobody has done that in this town nobody's done that in. Since he venues where bin likened the Aspen food and wine classic or give any of the big dinners have been to what a cool deal. It's here because you know what I believe -- is really. The difference it's just think the wind and the quality and service you agree you bring in people for dining experience. We were left to maximize it. To give you the best of the best not only the food to match to wine can only to bring the best of the -- By the let's go to stunning glasses that can bring the best -- -- varietal. So -- Google is not only to pitcher is just an expense -- -- class -- this is only meant to be Florida. To bring out the best of them but I -- the classroom and we thought we can go to the maximum why not. You know these are our best client we are on which to Kansas we want the -- -- when he America and went surfing. Somehow we have to show the world told the states or he had -- on the whole area -- progress we can do that as well. I know you can. We're gonna take one more quick break -- comeback talk more. With my -- that's gotten -- if you haven't been by again you won you can learn about some of the changes you can see.
